The mountain land beside Huanlong Lake, Huanren County, Liaoning Province is a characteristic wine production area in China.

Climatic Features:

It is located on the mountain land beside Huanlong Lake, Huanren County with an average elevation of 380m on the hilly land on the tail of Liaodong Changbai Mountain Range and the northeast side of Tianshan Mountain Range where belongs to the temperate humid and semi-humidcontinental monsoon climate zone featured by coldness, coolness and humidity with four distinctive seasons. On themountainland beside Huanlong Lake, the annual average temperature is 6.3℃, theannual active accumulated temperature (≥10℃)is 3045℃,theannual averagesunshine duration is2177.82h, the frost-free season lasts for 140 daysapproximately,andthe annualaverage humidity is67.1%. The geographicalconditionsof gentle slope towards the sunshine and being located near the mountain and by the river create a cold but not dry microclimate zonefacilitatingthe growing offrozen grapes. Theaveragetemperature in winter is below-10℃in ordinary years on the frozen grape base, meeting the ice-formation condition required by frozen grapes. During the grape picking season, the temperature drops to-8℃or even less than-20℃to ensure the production of icewine every year.

1)Vidal, a hybrid variety of European and Northern American grapes (hybrid fruit of Ugni Blanc and Serber) featured by appropriate yield, strong disease resistance and high sugar content, is one of the main well-known varieties for brewing icewine.

3) Grape Features:
Frozen grapes grow on smalltrelliseswith spacing between rows of1m×3m. There are 222 grapevines per mu and 2 branches and tendrils left for each grapevine. The yield per mu is limited to 400kg at most.
Due to the adjustment of Huanlong Lake Reservoirand the opulent sunshine and low temperature in winter, noblerotgrows on the surface of grape berries, endowingthe brewed wine with unique taste and flavor; the sugar content of the mature grape berries exceeds23°, and the temperature and humidity adjustment of Huanlong Lake make the fruit unshrinkable and fresh in case of prolonged picking; from the later period of grape maturity to the period before picking featured by little rainfall,adequatesunshine and appropriate humidity, the grape berries can keep appropriate juice yield and sugarcontentwith excellent appearance and quality. After natural refrigeration,the sugar content of frozen grape juice exceeds35°.

1) The frozen grape fruit is -7℃and even below -10℃and durable for over 24h to make the fruit fully frozen;
2) By low-temperature pressing at-7~-15℃, the sugar content of the pressed frozen grape juice reaches and even exceeds the standards ofVintners Quality Alliance(VQA) in Canada, that is to say, the sugar content of thefrozen grape juice exceeds350g/Land the gross juice yield is around20%;
(3) The low-temperature alcoholic fermentation reserves the residual sugar of grape fruit with the excellent high sugar-resistant brewer’s yeast at10~12℃for nearly 4 months. Whenthealcoholic content reaches11%v/vapproximately, the fermentation ends under low temperature; and
4) The frozen grape juice and icewine are both stored at low temperature with inert gas, etc. added to keep good fruit aroma.

Icewine is Optimal to be drunk at4-8℃.

Icewine can choose anycuisineas its partner, in which blueberry cheese and fat goose liver are the best choice. If icewine is drunk with sweetmeats such as fresh fruit and chocolate, the taste will be more wonderful and mellow.
