 Changyu Centenary Cellar Dry Red Wine is a kind of mellow cellar-stored high-quality wine made of Cabernet Gernischt & Cabernet Sauvignon produced by the special grape base of Changyu after fine grape selection, steeping fermentation, ageing in oak barrels of the centenary cellar, and storage in bottles.

Base Distribution:

500KG。The well-selected high-quality wine grape bases in Ningxia, Xinjiang and Yantai covering an area of 100mu respectively are chosen as the special bases for Centenary Cellar. With the guidance of experts in the whole planting process, the grapes are applied organic fertilizer and organic pesticide with strictly limited yield of 500KG.

Requirements of Raw Material Base:

High quality soil suitable for wine grape (Most vineyards are built on calcium-rich sandy soil to produce high quality wine with palate fullness)



Age of trees over 25 years

Yield per mu of 500KG, endowing grapes with rich content

Italian grape yield control: As for the first grade, grape is guaranteed to be 550kg/mu (DOCG) under the place of origin management; as for the second grade, grape is 700kg/mu (DOC) under the place of origin management, special wine is 1000kg (IGT), and table wine is 1200kg/mu (VDT);

Raw Materials:

Sugar content of over 23°, excellent quality, graded picking and fine selection

Why is the sugar content chosen as the evaluation index?

The sugar content directly reflects the quality of grapes which has direct relationship with the alcohol content of wine;

The sugar content is closely related to the color and aroma of grape as well as flavor substances. The color and aroma of grape as well as phenolic substance are all based on sugar substrate. If the sugar content is insufficient, the content of such substances is low.

How to judge the maturity of grape?

The maturity of grape is judged by measuring the content of sugar and acidity every 5-7 days during the mature period of grape. When the sugar content doesn’t increase and the acidity content doesn’t drop, it indicates the grape is mature physiologically. Then, grape picking can be done according to the weather conditions and actual situations.

Mixing: The blending period after all kinds of raw wine is mixed shall be no less than 12 months.

Matching:

 Cabernet Gernischt 30%+Cabernet Sauvignon 70%

Cabernet Gernischt: With fine aroma and gentle taste in Yantai and Ningxia.

Cabernet Sauvignon: With rich aroma and full-bodied taste in Yantai and Xinjiang.

Such matching ratio integrates the fineness of Cabernet Gernischt and richness of Cabernet Sauvignon in Ningxia, Xinjiang and Yantai with mellow and full-bodied taste as well as balanced and gentle structure, endowing wine with excellent framework structure.

Fermentation:

Fermentation in small containers: Combined fermentation in stainless steel barrel (50 tons) and oak barrel

Individual brewing technology: Yeast, pectinase, lactobacillus, fermentation temperature and dipping time all belong to special technologies.

Reladling: After the three-time reladling and special technical processing, wine is clarified.

Wine selection: Through tasting, smelling and physicochemical analysis, raw wine meeting the requirement is selected.

Mixing: The blending period after all kinds of raw wine is mixed shall be no less than 12 months.

Ageing in oak barrels:

The 225L barrels made of 100-year oak trees in Allier, France are used with gentle and durable aroma of wood.

It shall be stored in new barrels and oak barrels used for less than 3 years, in which the former accounts for 70%, and the latter accounts for 30%.

Ageing in oak barrels shall be no less than 24 months.

New barrel and old barrel:

The new barrel endows wine with fresh aroma of wood and feeling of tannin, while the oak barrel used for less than 3 years endows wine with rich structure. Combination of both makes wine featured by perfect structure and rich, gentle and durable aroma.

Storage in bottle:

Storage in cellar after bottling shall be no less than 24 months.

It takes 8 years to turn a grape to a bottle of Centenary Cellar Wine in cellar.

 

This wine is Optimal to be drunk at 16-18 with such partners as steak, roasted duck, sausage, ham and sauted meat.
