Why are not all wines needed for ageing?

Wine is a living thing, proceeds a series of biochemical reaction in vessels (barrels) and bottles, gradually maturing from “childhood—adult—prime time—seniority”. Therefore, longer storage duration does not expect more satisfactory taste. There is an “optimal” drinking period, i.e. the “prime time”. Different wines expect different prime time due to quality difference and such prime time depends on specific conditions of wine. Hence, crusted wine requires certain potential factors, such as grape variety, processing techniques, wine quality and variety. For wines of the same variety, the quality can be more satisfactory in a vintage year and the brewed wine can be stored for a longer period.
