Why are different tastes generated by using different barrels for storage?

For oak barrel, there are differences in sizes, age and forms (including vertical and horizontal type). For quality of wine stored in one form of barrel, differences exist in quality, flavor and taste, mainly caused by the difference in storage duration of period and capacity and age of barrel; all these factors influence the concentration of the extracted aromatic substances from wine liquid and bring different shades of colors. Generally, the alternative usage of barrels with different sizes and ages and service time of such barrels should take specific wine types into account, which completely rely on wine storage technologies. Therefore, only after blending and tasting, the flavor and taste of the final products can remain consistent.
